Juicing is not only healthy, it’s delicious! There are numerous combinations you can use but the best bet is varying colors and mixing fruit and vegetables.
I’ve been having so much fun with this that I decided to see how many things I can do with the peels. This day I experimented adding them to the rice I was cooking for dinner. I sauteed a clove of garlic in olive oil until it started to caramelize. Then I added about 4 heaping tablespoons of the peel mixture and sauteed for just a few seconds.
This created the most amazing flavor. I thought it would be sweeter but the rice almost tasted like a Spanish rice with a tomato base. The combination of swiss chard, red beet, ginger, lemon, carrots, parsley and an apple created magical flavor! Here is the vegetable rice with roast chicken which made a full balanced meal.
