QUESADILLAS

This Tex/Mex favorite is great made with flour tortillas and manchego cheese. Try also adding chicken, beef, scallions tomatoes or whatever your tastebuds desire. Check out the quesadilla video under Cooking Shows.

NACHOS

You can use traditional corn chips or pita chips to make great tasting nachos. The secret is to layer the cheese throughout the chips so they are never dry. Add jalapénos, tomatoes, chicken, scallions, or whatever you desire.

COLLARD GREENS

This is not your Southern Mama’s greens. Sauteing them lightly with olive oil maintains the rich benefits of this cruciferous vegetable. Delicious and nutritious.

BEING CREATIVE WITH MARGARITAS

Experiment with using other fruits for your margaritas. Try adding fresh watermelon like we did here. Or use mango, berries, or peaches. It’s nice to use fresh seasonal fruit. Also, many fruits can be found in all natural purees or frozen.
